Chinese Cooking With a Wok – Mum’s Cooking Secrets That Last a Lifetime

My mother was of the idea that a man’s place was never in the kitchen, and this was ingrained into us as she shooed us out of the kitchen every time whenever we tried to get into the kitchen to see what was cooking. It might not have been the best or correct thing to do, and as a result, her children -the sons, including me, grew up not knowing how to cook until we were college going kids and had to live away from home and to start to cook and fend for ourselves.

Disadvantaged as we were in cooking for ourselves, it made us more aware of the beauty in mum’s cooking. Mum’s prepared food that was absolutely marvellous, both in taste and smell. Meals prepared by her were never ordinary. They were a delight to behold, a pleasure to consume – no matter how simple the dish was.

Now in her twilight years, mum can no longer cook for herself. She has bouts of amnesia, and old age has taken a severe toil on her. Dependent on others to cook and serve her meals, she can sometimes struggle to the kitchen and still manage to prepare a ten minute fast cooking instant noodle, much to our chagrin and anxiety. The doctor orders were not to let her near a stove for fear of a fit or a fall, lest she burn the house down.

Just yesterday, in the quiet of the night, I was able to recall times I had with mum when I was about to go to college. Vivid in my mind, as history started to flash back, I remembered words of wisdom from mum on cooking. We were always profuse in our praise and bountiful in our appreciation for mum’s fantastic cooking.And on one occasion, she revealed the secret formula that had always enveloped the food she cooked.

“In Chinese cooking,” she said one day,” the two most important things are to have a sharp knife and a hot stove. Always sharpen your knife so that you can slice through your veggie and your meat or fish. Cutting them up becomes a pleasure and not a task. Be sure to have everything prepared before you start cooking: the vegetables washed, drained and cut; the meat cut and marinated; the sauces prepared.”

“And get yourself a good wok – It is the one piece of cooking equipment you may want to purchase before you start cooking Chinese food. Always heat up the wok. When cooking meat or poultry, make sure that the wok is very hot before adding the food. If you are going to stir-fried meat and vegetables, stir-fry the meat first and set it aside. Then return it to the wok with a sauce during the final stages of cooking. And use a little cornstartch as a binder at the end of your cooking, if it calls for that. Just remember how the dish tastes like, the way I cooked it”, she said.

Throughout the years when I had to cook, her words of wisdom flashed back to me whenever I despaired over my cooking. I had seen my cooking improved, and had added more styles and recipes to vary my cooking in the later years.

“And the secret ingredient in all Chinese cooking is to add a little bit of inner joy to your dish as you cook. When you approach your cooking with this little bit of inner joy, you will have a song on your lips as you cook. Something mysteriously will spur you on to do your best and turn on the magic in your cooking,” she added.

That day, last week, when I recalled those words of mum when I prepared a meal for her, I could only add not just a little bit of inner joy, I tried my best to give her a physical massive hug of love.

“Vary your ingredients to add textures, colors and flavors.Then it is possible to find harmony and balance in your meals. This is an important principle in Chinese cooking.”

The Difference Between Premium and Discount Fly Fishing Flies

How big of a difference do premium fly fishing flies make to your day on the water? There are many out there advertising “Quality” or “Premium” fly fishing flies, but are far from it. A premium dry fly will land right-side up, float properly and consistently, and retain those properties even after catching 5,10, even 20 fish. On the other hand, improperly tied flies will often land upside down, on their side, or even on their head.

A premium trout fly in a fly shop costs anywhere from $1.50 to $3.00, bass and surf flies $3.00 – $5.00 but there are literally dozens of online retailers who offer similar patterns for half that price. You may pay more for a premium fly at a fly shop but research suggests the fly will last nearly 10 times longer. You have to ask yourself one question: Do I want a 2 fish fly or a 20 fish fly? Let’s examine some of the differences:

Materials

The first important material is the hackle. Great strides have been made over the past 60 years with the hackles that are used by the premium commercial fly tiers. Flocks have been bread based upon color, hackle length, and barb stiffness to create superior hackle.

It has been a process beginning with Harry Darbee in the 1940′s and 1950′s continuing today with the hackles produced by Dr. Tom Whiting of Whiting Farms and Buck Metz of Metz Hackles, among others. Premium fly manufacturers such as Idylwilde Flies, Umpqua Feather Merchants, and Rainy flies use top quality premium hackles

The second material of significant importance is the quality of the hook. Tiemco has positioned itself as the World’s leader in premium grade fly fishing hooks with creativity and attention to detail in the functional designs of its premium fly tying hooks. From trout to tarpon, in freshwater or saltwater, for bass poppers or Micro Mayflies, top fly manufacturers choose Tiemco hooks over the other competitor’s best efforts. They were one of the first manufacturers to chemically sharpen the points and now is standard throughout the industry. They carry a very broad line of flyfishing hooks with about 46 models to choose from. At the end of the hook designation, you might see a “SP,” this stands for Specialty Point. The SP hooks have a hollow curve point with triangulated edges for easier sharpening. The hooks also have a slow taper which assists in easier hook sets. An interesting aspect of this hook is the basal end of the point has a swelling that works much like a barb without being a barb.

This may be of some advantage in holding hook sets with the barbless hooks. Another designation you may see is “TC” which stands for Tiemco Cut. This is a cut that Tiemco uses on certain wet and streamer flies for enhanced hooking penetration. “Its all about quality, or better said lack thereof,” Bruce Olson from Umpqua Feather Merchants says. “The first issue is that cheap imports always are tied on very cheap hooks, with strange sizing. I find that a quality fly has to be tied on [name brand] hooks. This becomes very important for big game, such as tarpon, where sharpness and tensile strength of the hook wire are vital.”

A discount fly company’s failure to use top-notch materials means the final product doesn’t measure up. As Shawn Brillon, the lead fly buyer for Orvis says, “If you have to tie with junk, often the final product is the same… junk.”

Discount fly manufacturers also take shortcuts to reduce costs and materials. Bruce states, “In order to produce flies that cheap, these guys have got to take shortcuts.” The discount fly companies use inferior hooks and materials, skip important tying steps (such as laying down a glue base on the hook shank to keep the materials in place), and don’t exhibit much quality control.

Patterns

A second important quality of premium fly fishing flies is the adherence to standard pattern recipes. Bruce described one “Copper John” that he purchased online as missing the epoxy over the shellback and the lead under the thorax.

“So, you may have saved a lot of money on the fly, but it’s not a Copper John!” he says, and he notes that such an inferior version of the popular fly won’t perform on the water the way its designer intended. Without the lead, it won’t sink correctly, and the lack of epoxy makes the fly much less durable.

Factories

Most fly production is done in third world countries because of price but also because they still work with their hands. Although they are third world countries the fly tiers are paid a good wage and earn middle class income for their work. The more expensive flies carried by the premium fly shops such as Blue River Fly Company are tied in Thailand, the fly tying capital of the world. There are over a dozen major fly tying companies that have tying facilities there. Other areas of the world that do a significant amount of fly production include China, Sir Lanka, and Kenya. There is some production in Central and South America, Mexico, and the Philippines. The fly production in the United States and Europe where the largest number of users are is primarily by home tiers or tiers that tie for specific fly shops.

Many premium fly manufacturers, including Idylwilde have a strong belief in corporate social responsibility and believe in fair trade. They take responsibility for the impact their activities have on customers, employees, communities and the environment. As Idylwilde describes on its website: “If a fly’s worth only $.99 it not only sucks, but it was likely tied in a third-world sweatshop and we’d rather not have that bad mojo hanging on our conscience. Idylwilde fly fishing flies are tied in Manila, Philippines under a markedly forward-thinking arrangement with Sister Christine Tan, a Catholic nun who believed her people needed more than charity. They needed good-paying, honest jobs they could rely on as they built a life outside the confines of poverty. Our promise to Sister Christine continues some 12 years later, now enabling over 150 tiers to better provide for their families. The flies you see here are the work of their hands and their hopes.”

Fly Fishing Fly Costs

The average cost of goods for a premium fly manufacturer for the simple dry flies and nymphs equates to about $ 4.50 – $5.50 a dozen. Additional shipping, duty costs and a US excise tax add an additional $1.00 a dozen.

The fly companies that are importing the flies need to make a profit so the cost to the shops are generally at keystone (50% markup) so the cost to the shops is now at $ 12.00 per dozen. The fly shop pays shipping and marks up for their operating costs and profit, keystone again, the cost to the consumer is pushing that $2 -3 price you pay at a brick and mortar fly shop.

The large box stores, in order to get the pricing down to what they do are either getting huge discounts for volume buying or they are getting flies that are tied somewhere other than Thailand, or both. Hopefully now when you get sticker shock when you go into a fly shop you can understand why the shop is charging what it does.

Cost per Fish

Bruce Olson argues that anglers should look at the cost of a fly in relation to its durability. If the 75-cent Stimulator falls apart after the second fish, but the $1.75 Umpqua Stimulator is good for 10 fish, then the cost-effectiveness of the more expensive fly is twice as high. (75 divided by 2 fish=37.5 cents per fish, 175 divided by 10 fish=17.5 cents per fish.) “You gotta do the math,” says Olson.

Premium Fly Fishing Flies

You would not settle for sub-standard rods, reels, fly lines, waders, etc. that fall apart or break after a couple times fishing. Why then settle of substandard flies? Flies are the most important part of fly fishing. If the end result to all of this is to catch fish then why not spend more time, money, and energy on the only element the fish actually care about?”

Price is a pretty good indicator to the overall quality of the flies you buy. Cheap flies are almost always cheaply tied. It does not take a Rocket Scientist to do the math. You can also test them out by making sure they don’t easily spin, are designed well for balance, are tied to the proper proportion, etc

How to Litter Train a Cat

For most cat owners, training their cat to use the litter is a relatively painless process. It is among a cat’s natural instincts to eliminate in an area that they can cover their feces in. This behavior may be a way of your cat accepting what they perceive to be as the natural order of dominance. In the wild feral cats will bury their feces if they are not at the top of their social hierarchy, if a feral cat does not bury his or her feces it is likely that the cat exhibiting that behavior is the dominant feline. So when your housecat buries his or her waste he or she may be recognizing your role as the dominant animal in their social community. It is also possible, however, that your cat may be displaying his or her inherited instinct to bury his or her feces in order to hide their trail from would be predators.

Generally kittens will learn the behavior of burying their feces and using the litter

through their mother once they are weaned assuming the mother is litter trained.

So if you bring home a young kitten of about 12 weeks, you may only need to

place kitty in the litter box and gently scratch the clean litter with your fingers

shortly after she eats to indicate to her what she is to do.

KITTY DIDN’T TAKE TO THE LITTER RIGHT AWAY

If your new cat doesn’t take to litter training after your first few attempts you may

want to consider teaching her using another common method. Confine your new

addition to a small but comfortable room, preferably one with a hard floor if you

have one. Place both the litter box and the food dish in the room but don’t place

them close to one another. Your cat will naturally not want to defecate near its food

source so she will look for another area. Eliminate any pillows, blankets,

newspapers, towels or other soft items where your cat may decide to eliminate from

the room before you close her in. If you have confined your cat to a room with hard

floors she is likely to avoid eliminating on the floor since urinating is likely to splash

back and get on her fur. The only remaining choice to the cat at this point is

(hopefully) the litter box.

MY CAT STOPPED USING THE LITTER

If your cat was housebroken and all the sudden she seems to have

forgotten that instinct there are a few possibilities you might want to consider

before giving up.

1. Does Kitty Have A Dirty Litter Box? The most common cause of a

housetrained cat to stop using the litter is your cat

disagreeing with the level of cleanliness regarding her litter box. Your cat is more

likely to

stop using the litter if she feels that it is too dirty. It is best to clean your cat’s litter

every day or at the very least every second or third day. The dirtier a litter box gets

the less likely it is that your cat is going to continue to use it. Your cat wants to

eliminate in a clean environment and if she notices that every time she eliminates on

the carpet you immediately run and clean it up she perceives that as a more

desirable place to eliminate because it is so quickly cleaned. Keeping your cat’s

litter as clean as possible is the best way to avoid this problem, and remember, what

you consider clean, your cat may not.

In addition to emptying the litter, you obviously need to change it from time to time

as well in order to ensure good cat health and cleanliness. Weekly changing is best,

this ensures that odors and wetness won’t have too much time to build up to

unacceptable levels and it also reduces the likelihood of sickness due to high levels

of bacteria.

2. Stress. A cat eliminating outside of the litter box may also be a sign for

stress.

The introduction of a new person or animal into the household may be putting a lot

of stress on your cat. Cats generally like to feel like they know what is going on and

what they can expect. If you upset that balance by introducing a new creature (even

a two legged one) into the household they may get stressed which can cause them

to eliminate outside the box.

If you leave your cat alone for long periods of time (for example while you take

vacations or go on business trips) and you come back you may

notice that your cat will sometimes seem aloof and standoffish. This is another

instance in which your cat may react with eliminating outside the litter box as a sort

of protest to what she perceives as being abandoned.

A new piece of furniture, or conversely, a newly missing piece of furniture may also

put stress on your cat. Order and comfort are important if you are a cat. If you

decide to get rid of that old fabric sofa because of it’s ugly pea green color and

because it’s falling apart at the seams and then you replace it with a brand new,

slick, top of the line, leather sofa with a refrigerator built into the side, and a

massage and heating function, your cat is unlikely to see this as a stylish upgrade

the way you would. What your cat will probably see is that one of her favorite nap

spots has disappeared only to be replaced by something she is unfamiliar with and

intimidated by.

3. Changing Litter Brands. Cats are creatures of habit and can also be

quite finicky (remember Morris, the 9 Lives cat?). If you’ve recently switched the

brand of litter you usually buy this may be cause for your cat to find another place

to go. Some litters are perfumed (for humans rather than cats) and your cat may

not react well to these smells, or perhaps your cat was used to a less dusty type

of litter, a particular litter’s texture, or who knows what. Changing brands or types

of litter may upset what your cat is comfortable with and the result may be a messy

carpet. If you suspect this to be the cause, you can either switch back, or

gradually introduce the new litter. Try mixing in a little bit of the new litter with the

older brand at first and gradually step up the percentage of the new litter each time

you change the box, eventually you will be able to replace the older brand

altogether. This will help your cat ease into the new litter brand rather than upset

her sense of the order of things.

4. Multiple Cats. As mentioned above a second animal may cause a cat to

begin to

eliminate outside of the litter box, but this may not necessarily be the result of

stress. A second cat in your household should probably have his own litter box

unless your cats have proven they don’t mind sharing. Again, remember cats are

clean creatures and they can be territorial as well. Some cats may not mind using

the same box, but others may refuse, which means again, the carpet becomes litter

box number two.

5. Litter Box Size Or Placement. If the litter box does not provide enough

room for

your cat she may not use it at all. Your cat will likely want to scratch around and be

able to feel comfortable in the litter box. Make sure it is roomy enough, easy

for your cat to get in and out of (the sides of the box should be lower for kittens

than for adult cats), and not in a high traffic area as cats seem to like some

degree of privacy when eliminating. Lastly, make sure your cat has access to the

litter at all times. Putting your litter box in a room that is closed on occasion is a

recipe for disaster. If your cat has to go and she can’t get to the room that you’ve

put the litter in then she really will have no other alternative than to find another

suitable area to eliminate.

6. Medical Issues. Your cat may be experiencing kitty incontinence. Like

humans,

incontinence can strike animals and this may be an indication of other medical

issues with your cat. As a cat ages, she becomes more likely to lose control of her

bodily functions just like a human does. If you suspect age or medical reasons may

be the cause for your kitty’s litter box problems then you should take her to the vet

for an examination, advice and possible treatment to resolve the problem.

WHEN YOUR CAT MAKES A MESS

If your cat does make a mess outside of the litter box it is generally not good

practice to scold her or punish her. Putting her nose in the mess and then tossing

her in the litter is not going to solve your problem. Being upset with your cat is

natural after such an incident, but to display this behavior and then to put her in the

litter box is only making your cat associate the litter box with a bad experience.

Your cat may also begin to learn to be afraid of you, which is obviously not what you

want. Your best solution is to clean up the mess quickly. Put your cat in the litter

box and be friendly and speak in a calming voice with the cat. Scrape the clean

litter with your fingers and make sure your cat sees this behavior, hopefully it will

sink in. To avoid having your cat defecate in the same place outside the litter box a

second (or third) time, cover the area with a plastic sheet or something hard that

will result in your cat splashing herself with her own urine if she should chose that

place to defecate again. Clean the smell as best you can (white vinegar may help,

but make sure your furniture or carpet can handle it). You can also move her food

dish on top of or near the area that she used to defecate, a cat will not want to

defecate near her food source. If your cat uses the litter again, even just once,

reward her, play with her, pet her, give her a treat, make her associate the litter box

with a good experience rather than a bad one.

A cat that eliminates outside of the box is not a lost cat. Don’t give up on her until

you’ve explored the possible reasons for the problem. Once you find it, you can

most likely correct it and kitty and human can live a happy co-existence once again.

How To Write A Job Winning Resume That Puts Yours On Top

Many people would love to get a better job. And most of these same people have the proper training and skills to achieve this goal. Unfortunately, so many job hunters have very poor communication skills. They are unable to clearly tell potential employers about their job qualifications. In short, they do not have good job seeking skills. In many cases, this prevents them from getting a high paying job that they could easily do. Often, the job will go to someone who is less skilled but who has written a eye-catching resume. Often, job seekers have a few mistaken opinions about potential employers. They believe that employers are able to easily separate the qualified job applicants from the less qualified applicants. But this is likely not true. Sometimes there are from 30 to 300 resumes for the same job. So the interviewer first does a fast screening of all the resumes to eliminate as many as possible. The “good” resumes usually make it through the screening process. Many times the best job candidate is screened out due to a poor resume. In today’s business world there is often many qualified applicants applying for the same job. What if, out of all of those who apply, one job seeker turns in a skillful resume? Who do you think stands the best chance of getting the job? It’s the one with the “best” resume, of course. This is so often true even through some of the other applicants may be better qualified for the job. In order to get a good job you must communicate to the employer that you are ready, willing, and able to do the job. So if you are capable of producing a top notch job resume, you definitely increase your chances of getting a better job. Virtually every potential employer will want to see a resume from you. The resume will determine who gets a job interview. Your resume is a mini-statement about yourself. After reading your resume the employer should have a better “feel” for you as a person and as a potential employer. It serves to get acquainted with the employer so that they can decide if they want to know more about you. The resume is the first step, your introduction to an employer. First impressions really do count. If you make a poor first impression, you’ll never get to step two — the job interview. To the purpose of your resume is to make a good first impression. In effect, your resume should tell the employer that you have good abilities and are truly interested in working. This report will help you make that good first impression. And it could very well help you to get the better job you’re looking for. RESUME BASICS All good resumes follow the same general basic guidelines. While there is some flexibility in these guidelines, you don’t want to stray too far from them. You want a resume that is bold, exciting, and enticing. But not too much so. You also want a resume that is somewhat conservative. In other words, it must be bold. Not flashy. You must show that you have confidence in your abilities, but not sound like a braggart. You must sound eager to do the job, but not desperate. So there is a fine line that you must walk in order to produce the best possible resume. You want to use intelligent language. However, you don’t want to try and impress the employer with long, flowery, or uncommon words or phrases. Use everyday language whenever possible. Of course, if you are applying for a highly technical position, it’s acceptable to use some of the special terms used in that particular profession. But as a rule you should keep it simple and straight to the point. The word resume comes from the French word “resumer” which means to summarize. So the exact purpose of a resume is to summarize your experience, knowledge, and accomplishments. Therefore, you must avoid being too wordy. Say exactly what you mean in the least number of words possible. The length of your resume is important. Resumes should be from 1 to 3 pages long. Don’t be tempted to make your resume longer than 3 pages, even if you have a lot to tell. Remember, a resume is supposed to be a summary. A resume that is too long simply will bore the reader. There will be so much material that nothing will stand out and be remembered. RESUME APPEARANCE The overall appearance of your resume is also important. A sloppy looking resume will greatly lessen your chance of getting a job interview. The first thing that an employer, or personnel manager, evaluating your resume will notice is it’s appearance. There are several different things that can be easily done to increase the overall appearance of your resume. The first of these appearance factors is the paper that your resume is printed on. There are many different kinds of paper other than regular typing paper. You could make an improvement by using a colored paper. I suggest a subdued color like brown, off- white, or gray. Next, you could use a better grade of paper. Go to a local office supply store and examine the different types of writing paper. You’ll notice some big differences. Pick out a nice looking, more expensive grade of paper for your resume. The next thing to consider is the quality of the material that is typed onto the resume. Never use a low quality typewriter to type your resume. If necessary, rent a good quality typewriter. Then make certain that it has a fresh ribbon in it. It’s very important that you make sure the writing on your resume looks good. This means clean, crisp, and sharp looking letters. Another good way to produce a top looking resume is by having it typeset. If your resume was produced using a computer and saved on a disk, you can hire a commercial typesetter who can use this file. Or, you can locate another computer user who owns a laser printer. Laser printers can produce a good grade of typeset documents. The other alternative is to find a local word processing service that can typeset your resume for you. You can use the typeset master copy of your resume to make more copies. But be certain that you use a top notch copying machine. Otherwise, you’ll still end up with poor looking resumes. Another alternative is to have the typesetter produce as many original copies as you need to ensure that they all look good. A third aspect of your resume’s appearance is more subjective. It takes into account such things as the letter spacing, how each section is arranged, and it’s overall appearance. Some resumes simply look better because of the way they have been designed. At the end of this report, you’ll see an example of a properly prepared resume. Never overcrowd the resume. Leave some “white space” so that important points can appear to pop out. Never submit a resume with handwritten corrections. You can highlight sections of a resume by using a different typeface or size or by using “bullets.” If possible, use larger letters for the headings used in the separate sections of the resume. Never try to be too fancy by using wild colors, cute graphics, and so forth. Don’t be overly creative. A simple, straightforward, factual resume will do nicely. Make it stand out, but stay conservative. Another phase of your resume’s appearance is it’s accuracy. Make sure there are no misspelled words! Mistakes will create the wrong image. Make sure that the punctuation is correct. And make sure that all of your columns line up. See that all of your facts are correct. Don’t say you attended 3 years of college, but only show two years worth of grades. Potential employers will note all inaccuracies and wonder why they appear in your resume. OPTIONAL DATA There is a variety of personal data that may be somewhat controversial if included in your resume. In the past it was acceptable to include all kinds of personal data, but times and laws have changed. Affirmative Action laws have made it illegal to discriminate based on such things as age, sex, marital status, race, religion, and so forth. Therefore, most experts recommend against placing this kind of personal data into your resume. Your salary requirements should not be listed in the resume, if you can avoid it. The reason is that if you put too low of a salary, you might be paid less than the real value of the job. If you put down a figure that’s too high, you may not get considered for the job. If an employer likes you, it may be possible to negotiate a higher salary during the interview stage. Another thing that your resume doesn’t need is your photograph. Potential employers can decide if they are interested in you after reading your resume. They can see what you look like during the interview. RESUME STYLES There are several styles of resumes along with numerous variations. Your experience and the kind of job you are applying for will help to determine the style of resume you use. The two basic styles are: Chronological Resumes and Functional Skills Resumes. Some of the variations include the main themes of business, academic, general, student, standard, professional, or engineering. A Chronological Resume lists work experience in reverse chronological order (the most recent experience first). It includes some descriptive text about each position, usually described in about one paragraph. This type of resume offers several advantages: it is widely accepted, they are easy to read, and they show a clear pattern of your development. Don’t try to oversell yourself by claiming you did things that you didn’t do. As you can see, a resume is really a very simple document. Other good places to look include: trade shows and professional conventions, personnel offices, college placement offices, friends you have who are in the same profession as you. Another method is to simply go through the yellow pages and look for companies which may need a person with your skills. Then contact these companies by phone and follow-up by sending in your resume. Job seeking is a skill that requires persistence. You must not become discouraged. Keep making plenty of contacts. Sooner or later, you’ll find the job that’s right for you. THE JOB INTERVIEW Most people are nervous when they go to a job interview. However, by preparing beforehand you won’t have anything to worry about.
